Easy Peach Cobbler in Cast Iron Skillet
Ingredients:
½ cup (1 stick) unsalted butter
3 fresh peaches, sliced, or 3 cups frozen peaches, thawed
Peach Syrup:
1 tablespoon Twisted Olive Peach Balsamic Vinegar
3 tablespoons water
¾ cup granulated sugar
¾ cup all-purpose flour
2 teaspoons baking powder
¾ cup milk
Salt, to taste
Optional: ½ teaspoon ground cinnamon
Instructions:
Preheat the oven to 375°F (190°C).
Melt the butter in a cast iron skillet or an 8x8-inch baking pan over medium heat on the stovetop or in the oven.
In a large mixing bowl, whisk together the sugar, flour, baking powder, salt, milk, and cinnamon (if using).
Once the butter is melted, pour the batter evenly into the skillet or pan. Make a design as show in the photo above if you want. Do not stir.
Mix the sliced peaches with the peach syrup and add them to the pan on top of the batter.
Bake for 45 minutes, or until the cobbler is golden brown and the fruit is tender. Depending on your skillet — it might be a total crust on top — which is amazing too!
Serve warm with ice cream and enjoy!
