Bacon Cornbread
Ingredients:
1 cup flour
1/2 tsp baking soda
3/4 cup yellow cornmeal
2 tbs baking powder
1 tsp salt
1/2 cup honey
1/2 cup Bacon EVOO
1 & 1/4 cup buttermilk
2 large eggs
Directions:
Preheat oven to 375
In a mixing bowl combine dry ingredients
In another bowl combine wet ingredients & eggs, mix well
Add dry ingredients to wet and mix. Do not over mix, there will be lumps
Grease baking pan with additional EVOO & dust with flour
Pour Batter into the pan and bake for 30min. Cornbread is done when tooth pick inserted in center comes out clean
Let cool 10 min before serving
