Bacon Cornbread

Ingredients:

  • 1 cup flour

  • 1/2 tsp baking soda

  • 3/4 cup yellow cornmeal

  • 2 tbs baking powder

  • 1 tsp salt

  • 1/2 cup honey

  • 1/2 cup Bacon EVOO

  • 1 & 1/4 cup buttermilk

  • 2 large eggs

Directions:

  • Preheat oven to 375

  • In a mixing bowl combine dry ingredients

  • In another bowl combine wet ingredients & eggs, mix well

  • Add dry ingredients to wet and mix. Do not over mix, there will be lumps

  • Grease baking pan with additional EVOO & dust with flour

  • Pour Batter into the pan and bake for 30min. Cornbread is done when tooth pick inserted in center comes out clean

  • Let cool 10 min before serving
