Herb-Infused Chicken Delight Sandwich
Ingredients:
2 boneless, skinless chicken breasts
1/4 cup Twisted Olive Tuscan Herb Extra Virgin Olive Oil (EVOO)
Salt and pepper, to taste
1 tsp dried oregano
1 tsp dried basil
1/4 cup mayonnaise
1 clove garlic, minced
4 slices of your favorite bread (sourdough, ciabatta, or whole grain)
1 cup mixed greens (spinach, arugula, or lettuce)
1 tomato, thinly sliced
1/2 red onion, thinly sliced
Directions:
In a bowl, combine the Twisted Olive Tuscan Herb EVOO, salt, pepper, dried oregano, and dried basil. Coat the chicken breasts in this mixture and let them marinate for at least 30 minutes.
Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breasts for about 5-7 minutes on each side, or until cooked through. Remove from heat and let rest for a few minutes before slicing.
In a small bowl, mix the mayonnaise with the minced garlic to create a garlic mayo spread.
Toast the bread slices until golden brown.
To assemble the sandwich, spread a layer of garlic mayo on each slice of toasted bread. Layer the mixed greens, sliced tomato, and red onion on one slice. Add the sliced chicken breast on top.
Close the sandwich with the other slice of bread, cut in half, and enjoy!
