Maple-glazed Sweet Potatoes with Balsamic Glaze

Directions:

  1. Preheat oven to 400 f

  2. Toss sweet potatoes with olive oil, maple syrup, cinnamon, and salt

  3. Spread in a single layer on a baking sheet

  4. Roast for 20-25 minutes, or until tender and slightly caramelized

  5. Simmer the balsamic vinegar in a small saucepan over low heat until reduced by half and slightly syrupy

  6. Drizzle the balsamic glaze over the roasted sweet potatoes before serving
