Maple-glazed Sweet Potatoes with Balsamic Glaze
Ingredients:
4 medium sweet potatoes, peeled and cubed
1/4 cup maple syrup
1/4 tsp ground cinnamon
pinch of salt
Directions:
Preheat oven to 400 f
Toss sweet potatoes with olive oil, maple syrup, cinnamon, and salt
Spread in a single layer on a baking sheet
Roast for 20-25 minutes, or until tender and slightly caramelized
Simmer the balsamic vinegar in a small saucepan over low heat until reduced by half and slightly syrupy
Drizzle the balsamic glaze over the roasted sweet potatoes before serving
