Mediterranean Quinoa Salad
Ingredients:
1 cup cooked quinoa
1 cucumber, diced
1 bell pepper, diced
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
Salt & pepper to taste
Fresh parsley for garnish
Directions:
In a large bowl, combine quinoa, cucumber, bell pepper, tomatoes, onion, olives, and feta.
In a small bowl, whisk together Kalamata olive oil, Aged balsamic vinegar, salt, and pepper.
Drizzle the dressing over the salad and toss gently to combine.
Garnish with fresh parsley before serving.
